Added richer lead data capture in quiz and build plan

Now we collect not just email but also name and phone number during the quiz and build plan flows. This helps us get better contact info for leads and improves how we save and track them.

We plugged PostHog into the quiz components to track user progress through every step with consistent event payloads. This gives us clearer insight into how users move through the funnel and where they drop off.

All quiz-related analytics events now use a standard structure, including session IDs and step info. This makes our data cleaner and easier to analyze.

Improved error handling and data persistence for leads

The lead saving logic was refactored to better handle errors and ensure all available contact info is stored reliably.
